Harvesting & Initial Curing

We only harvest vanilla pods that have reached their peak maturity, indicated by a slight yellowing at the tip. Each pod is individually hand-selected for optimal quality.

Traditional Sweating & Sun-Drying

This is the heart of our process. Through a daily cycle of careful sun-drying and ‘sweating’ overnight for many weeks, our vanilla pods develop their characteristic dark brown color and complex, deep flavor profile.”
